is there an Eclipse plugin that allows code selection and synchronized
replacement of variable name? (just like in JBuilder)?

Do you mean a refactoring where you change all occurances of a particularly
member or method name with a new name? If so no plug in required.

Try select name
R click
refactor | rename
...
