Is it simple to convert an EJB application built with WAS to JBoss ?

Depends... If you built it according to the j2ee specs only (without WAS
fancy stuff like startup beans) then it shouldn't be very hard. If you
have used XDoclet to generate all the deployment descriptors, then add
the lines for JBoss.
