We're looking for a simple bug-tracking app. Jira looks cool, but it's not
cheap. Bugzilla looks complicated.
Any suggestions?

If your needs are very simple, you might look at Bugrat.

Mantis: http://www.mantisbt.org
Not written in Java, but in PHP and MySql.
We have used this extensively with good results. Easy-to-use, capable
of notification and
personal categories as well as subprojects and filtering and search.

An easy to use, but still very powerful, bug tracking application is
VisionProject. You can use the hosted version for 12 USD per user per
month.
Check it out at http://www.visionproject.se
